Hello summery desserts.
When summer rolls around down here in the south it gets to the point where any kind of baked good goes out the window. And all the no-baked goods come in.
Which I am totally okay with. Cause who doesn’t want no-bake brownies, no-bake tarts, no-bake cookies, freezer fudge, and of course… all the homemade ice creams.
No matter the time of year, I’m always in the mood for a good homemade ice cream.
Creamy Lemon Ice Cream.
This easy and delicious no-bake treat is perfect for those too hot days where you just want to sit around chilling. Or for those days you are dreaming of summer and you’re willing to snuggle up in a blanket with a summery treat.
It only requires a few ingredients, a blender, and an ice cream maker, and you could probably make it without the ice cream maker, if you need to, it just might not be as fluffy.
If you’re a lemon-lover, this is for you. The lemon flavor is just right, the creaminess is perfect, and the no-bake-ness is wonderful. It’s probably the best homemade dairy-free ice cream I’ve had in a good long while, and it’s easily sweetened with either stevia OR honey.

Creamy Lemon Ice Cream
Free from grain, gluten, dairy, and refined sugar.
Ingredients
- 4 cups of full-fat coconut milk (about 2 1/4 cans)
- 2 teaspoons lemon zest
- 1 teaspoonunflavored liquid stevia (1/2 cup honey can be used for those on GAPS)
- 4 egg yolks (please use fresh, free-range or organic eggs!)
- 1/4 teaspoonHimalayan salt
- 1/2 cup lemon juice (about 2 1/2 lemons)
Instructions
Place all ingredients in a blender and puree (I use my beloved Blendtec).
Pour mixture into an ice cream maker and churn for 25 minutes. (I use a KitchenAid ice cream maker attachment.)
Pour into a freezer-safe container and freeze for 2 hours, or until set.
Let set out for about 20 minutes before serving.

Oh my. Any paleo ice cream that includes egg yolks knows what it’s doing. And lemon is one of those flavors you never really see in stores so this is the perfect recipe to make at home!

I love that melty shot in the loaf pan! YUM! It’s 95 degrees here and we have no AC and I’ve been totally worthless today. I wish I had some of this ice cream to liven me up!

What is the purpose of eggs in ice cream making? Can this be made without?

The eggs make ice cream nice and thick and creamy. If you want to leave them out you totally can. It will just change the texture (and of course make it not as nutritional!). 🙂
