Where are all my salad lovers at? 😀 I am a hard-core salad loving girl. They are definitely in my top 10 favorite things to eat. There are about 1.3 million ways you can make them and that’s probably why I love them so.

This CRISPY CHICKEN BLT SALAD is one I made for lunch last week and it was divine. Crispy chicken tenders, lots of chopped bacon, cherry tomatoes and croutons over a bed of romaine lettuce. Delicious! I toppedours with Wild Coyote ranch dressing and went to town on it. 😉

For those of you that live in Utah I’m sure you’ve had Wild Coyote ranch. And if not, you NEED to try it. It is the most amazing ranch on the planet. My kids adore it so much they will not eat any other ranch. haha! My next mission in life is to find out how to make it myself!

Crispy Chicken BLT Salad

Crispy Chicken BLT Salad is loaded with chicken tenders, lots of chopped bacon, cherry tomatoes and croutons over a bed of romaine lettuce. Serve it with your favorite dressing for one amazing salad!

Servings 3

Ingredients

  • 6 breaded chicken tenders
  • 3 hearts romaine lettuce rinsed, dried then chopped
  • 6 slices bacon cooked then chopped
  • 1 cup cherry tomatoes sliced in half
  • 1 cup croutons
  • Dressing of your choice (we use ranch dressing)

Instructions

  • If using frozen chicken tenders, cook in oven according to package directions. You could also buy hot breaded chicken fingers from a grocery store deli. Chop into bite-size pieces.

  • Place chopped romaine lettuce in a large bowl. Top lettuce with chopped chicken fingers, bacon, tomatoes and croutons. Pour on as much dressing as desired then toss to combine.

  • Serve on individual plates or bowls and enjoy!

    Wow! I cannot believe no one has commented on this recipe yet. Maybe they think it’s too cold to make salad for dinner? I love BLT salads, and like you, ranch is my go-to dressing for them. I first tasted one at Cracker Barrel about a million years ago. It’s no longer on the menu, but they’re happy to make one for you. The trick is finding a waitress who remembers them.

    I often sub sliced or quartered hard-cooked eggs for the chicken and like to add a wedge of cheese on the side. Sometimes I add scallions. Any way you rock it, this is a winner. So good, in fact, it’s one of only 4 salads in the “Go-To” folder in my meal planner.

  3. I am about to make this! It’s a perfect summer dinner for the family, and simple enough for me to make! I think I’ll use whole tomatoes instead of cherry tomatoes and I’ll put some veggies including cucumbers on the side… Thanks for the awesome recipe!

  7. What is wild coyote dressing. I make one with ranch and the amazing sauce from Wingers…so good. Just a bit of a tang!

    1. Hi Lee! I am not sure if Wild Coyote sells anywhere else. I’m sorry! Maybe if you google their website you can find out if they sell in other states. 🙂
