What are Empanadas?

If you have never enjoyed one, then you are in for a treat! This meat-filled pastry is one of my all-time favorites.

It’s a stuffed bread pastry that can be baked or fried. The name comes from the word empanar, a Spanish word, which means to wrap bread.

It’s made with a savory dough and then stuffed with meat, vegetables, or fruit. They are well known throughout Latin America, South America, Spain, Portugal, and areas surrounding the Caribbean like Puerto Rico.

Goya Wrappers

These are my favorite wrappers to use and the only ones I use for this recipe. I grab them from a local Mexican grocer. You can try calling local stores in your area. They will likely have a substitute brand you can check out.

Ingredients

  • 12 Goya Empanadas wrappers thawed
  • 1/2 pound ground beef
  • 1/2 cup chopped onion
  • 2 garlic cloves minced
  • 1 cup shredded Mexican Blend cheese shredded
  • 1 egg
  • 2 teaspoons water

Homemade Taco Seasoning

Instructions

Empanadas

  • Heat a skillet on medium-high heat. Add the garlic and onions to the skillet. Cook until fragrant.

  • Add the ground beef to the skillet. Season the beef with the seasonings. Using a meat chopper, break up the beef into small pieces. Cook the beef until browned. Drain any excess fat. Add the shredded cheese and stir until melted.

  • Lay the empanada wrappers on a flat surface. Dip a cooking brush in water. Glaze each of the empanada wrappers with the wet brush along the edges. This will soften the crust and make it easier to roll.

  • Load the ground beef mixture into the middle of each of the empanadas. Add 1 tablespoon of beef per empanada. Do not overstuff. Flatten out the beef mixture with a spoon.

  • Close the empanadas. Use a fork to seal the empanadas along the edges by creating indents in the crust. Press the fork down into the crust along the edge of each.

  • Add an egg to a small bowl and whisk it along with 2 teaspoons of water.

  • Use a cooking brush and glaze the top of each empanada with the egg wash.

Oven and Baking Instructions

  • Preheat oven to 425 degrees.

  • Add the empanadas to a baking sheet with parchment paper. Bake for 20 minutes or until golden brown.

  • Allow to cool before serving.

Air Fryer Instructions

  • Spritz the air fryer basket with oil or line with air fryer parchment paper.

  • Place the empanadas in the air fryer basket.

  • Air fry on 350 degrees for 8-10 minutes or until crisp.

Notes

  • For the cheese I use a blend of Monterray Jack, Sharp Cheddar, and Queso Blanco.
  • If you want really gooey, cheesey empanadas, you will need to add more cheese, consider doubling the amount of cheese.
  • I often double this recipe for a crowd, the process photos above reflect doubling the recipe. Simply double every ingredient.
  • You can substitute puff pastry if you can’t find empanadas wrappers.
  • Instead of making your own seasoning, as directed in the recipe, you can purchase store-bought taco seasoning.

FAQs

Is it better to fry or bake empanadas? ›

Sometimes empanadas are fried, and sometimes they're baked. We love these baked empanadas for many reasons: Not only are they easier to cook, but they are also a healthier option. Bonus: you don't have to figure out what to do with a pot of hot frying oil when you're finished cooking.

Which dough is best for empanadas? ›

Empanada dough is less flaky than pie crust (although you can substitute frozen pie crust dough in a pinch). It has a more tender texture that soaks up the filling without becoming soggy. This dough can be used for baked or fried empanadas, which are both great handheld dishes.

What is empanada filling made of? ›

What Is An Empanada? Empanadas are crescent-shaped, savory pastries made of dough and filled with a variety of ingredients. Empanada filling varies greatly, and can include anything from beef, chicken, pork, tuna, shellfish, cheese, and / or vegetables, seasoned vibrantly, then baked or fried to perfection.

How do you keep empanadas crispy? ›

The best way to keep fried foods crispy? Just place them on a cooling rack set over a baking sheet. If you're frying multiple batches, throw the whole setup into a low oven to keep everything warm as you keep frying and adding to the rack.

How do you keep empanadas from getting soggy? ›

Chilling both the filling and the dough will keep the liquid inside where it belongs and keep the edge sealed, preventing bursting and that dreaded soggy bottom.

Can you make empanadas with pizza dough? ›

And while we love traditional empanadas, fussy pastry dough is a lot to tackle on a busy weeknight. Here, we use our favorite dough hack, ready-made pizza dough, for a quick-ready-to-roll crust. It's crisp and tender and works perfectly to enclose the grass-fed ground beef, bell pepper, and golden raisin filling.

Why put vinegar in empanada dough? ›

Adding a little vinegar to your dough will result in a tender, pliable, and flaky crust because it slightly inhibits gluten development, leading to a crust that is flakier and easier to work with. The great thing about vinegar is that you really only need a little bit of it to help your pie/empanada dough.

What is the difference between Spanish empanadas and Mexican empanadas? ›

The Spanish recipe was made with bread dough, the Mexican recipe with corn masa dough. This is where Mexican empanada history takes over. Each region in Mexico has their own version of the empanada. Some regions use wheat flour, some use corn masa dough, some are deep fried some are baked.

What can I substitute for empanada dough? ›

As mentioned above many people will use their favorite pre-made pie dough to make empanadas. This is because the ingredients for most dough recipes are very similar. Most pie doughs use flour, butter, salt, water, and sometimes egg; an ingredient list almost identical to those needed for this recipe!

Is empanada dough the same as tortilla dough? ›

There's not a lot of difference — chief one being that you use ice water with empanada dough, and hot water for tortillas. Another difference is the flour.

Why does my empanada dough crack? ›

The main ingredients are water and corn flour. If you don't work quickly, the dough will dry out and start to crack.

Can you use a tortilla press for empanada dough? ›

The masa was quick and easy to make, and very forgiving to work with. Instead of rolling her dough, Gutierrez recommends using a tortilla press.

What is the difference between baking and frying empanada dough? ›

Baked empanadas are easier because you can bake a whole ton at once and certainly lighter without all that deep fried goodness but they don't have quite the same flavor as the fried version. So I leave it up to you! Don't skip the egg wash if baking because it is what helps give the empanadas their color!

Why bake instead of fry? ›

The oxidised oils can cause many possible health problems including damage to the heart, kidney and lungs. Consuming oxidised oils can also lead to the increased risk of high blood pressure and atherosclerosis. As baking requires no addition of oils, it does not cause any oxidation.

Why is it better to bake than fry? ›

While any type of cooking naturally reduces the nutrients in food, frying reduces the most nutrients while absorbing fat from the oil. Baking, however, enhances some nutrients and makes the protein in some foods easier to digest, making it a better and healthier way of cooking food than frying.

Should I fry or bake? ›

Greater nutrient retention: Unlike frying, baking is a preparation method that retains many nutrients commonly lost when cooking. There is better preservation of healthy vitamins and minerals while minimizing your chances of the bad ones, like aldehydes, which can result in foods fried at high temperatures.
