This keto stuffed bell peppers recipe is very easy to make. It is filled with our delicious cajun ground beef and topped with melted cheese. With just 3 grams of net carbs and budget-friendly, it’s the perfect meal on its own or a side dish for meaty dinners.

Peppers can be stuffed with almost anything, but this spiced cajun ground beef version is one of our favorites with its unique flavors and mild heat. Try the cajun ground beef in place of our bolognese sauce with our stuffed zucchini boats recipe.
This stuffed pepper recipe makes 6 servings. One serving is one stuffed pepper (just 6g net carbs), but you can always eat more if you’re hungry!

- 1 tablespoon of Olive Oil
- 1 small Onion, diced
- 2 cloves of Garlic, crushed
- 1 pound of Ground Beef
- 2 tablespoons of Cajun Spice
- 1 teaspoon of Salt
- ½ teaspoon of Pepper, ground
- ½ cup of Tomato Passata
- 1 cup of Cauliflower Rice
- 6 medium-sized Peppers (Capsic*ms)
- 1 cup of Cheddar Cheese, shredded
How to Make Stuffed Peppers

- Preheat your oven to 200C/390F.
- Place a large saucepan over high heat and add the oil, onion, and garlic. Saute until the onion starts to turn translucent.
- Add the ground beef and saute until browned. Then add the Cajun spice, salt, pepper, and tomato passata. Mix well.
- Lower the heat and simmer the mixture for 5 minutes.
- Remove the pan from the heat, stir through the cauliflower rice, and set aside.
- Prepare the peppers by slicing off the tops and removing the seeds and white pith from the inside. Sit them in a baking dish with the cut sides facing up.
- Evenly spoon the ground beef mixture between the peppers and top with cheddar cheese.
- Bake in the oven for 15-20 minutes until the cheese has browned and the peppers are soft.
- Serve immediately.

Excited to try these! Should the cauliflower rice be cooked, or will the raw riced cauliflower cook adequately in the oven?

The cauliflower rice is added raw and cooks when added to the meat mixture and also when baked in the oven 🙂
