Our vegetable skewer co*cktail recipe honestly couldn’t be easier to make. You can use a hand blender, a small food processor, or even a blender to whip-up the cream cheese dipping sauce. When the cream cheese and the olive oil combine, they create an ultra-creamy texture that’s hard to beat. Add in chopped celery for some crunch and lemon juice to give it a boost of tanginess, and you have a winner!

Perfect Pairings

The skewers themselves are simple to create, too. We’ve suggested using cherry tomatoes, baby carrots, and very thinly-sliced zucchini. These vegetables create a nice blend of texture and colors that are visually appealing. You could actually use whatever is in season, though, so don’t be afraid to think out-of-the-box. Blanched broccoli, colorful bell peppers, roasted baby Portobello mushroom caps, or yellow summer squash would also make great choices.

Every vegetarian at the party will love this very simple, healthy vegetable skewer! They’re incredibly refreshing and will make a great counterpart to the heavy-flavored appetizers, like meatballs or buffalo cauliflower bites.

Our vegetable skewer appetizer is easy to pair with wine, too.If you want to accompany this recipe with wine, we suggest a young, dry white wine that has been vinified in stainless steel. Anything with a good balance of acidity and sapidity will go well, especially a wine that shows off its floral and fruity characteristics. Try Muscadet, Sauvignon Blanc, Pinot Gris, Gruner Veltliner, Pigato and a whole lot of varieties.

FAQs

Can you prepare vegetable skewers the night before? ›

All you need to do is chop your veggies and whisk together the sauce ingredients before grilling. I've found that with the vegetable listed in this recipe, I can chop everything and assemble the skewers up to 2 days in advance without them getting mushy. Just make sure you cover them and refrigerate.

What vegetables are good on skewers? ›

Some of my favorites for kabobs are: bell peppers (any color), zucchini, yellow squash, mushrooms, onions (I like red onions, but yellow onions or shallots are great too), and tomatoes (smaller cherry or grape tomatoes). I've also tried grilled brussels sprouts on skewers and loved them!

What seasoning to put on vegetable kabobs? ›

Whisk olive oil, basil, oregano, salt, and black pepper in a bowl; brush some of the mixture over vegetables. Cook skewers on the preheated grill until vegetables are tender, turning and basting vegetables with remaining olive oil mixture occasionally, 10 to 15 minutes. Serve and enjoy!

Should you marinate vegetables for kabobs? ›

In this grilled vegetable skewers recipe, you'll marinate the vegetables for at least an hour. That's a good rule of thumb for most vegetables, too. You want to make sure there's enough time for the flavors to penetrate the vegetable skins and into the flesh as much as possible.

Can I marinate veggie skewers overnight? ›

Place skewers in a large, rectangular resealable container. Pour dressing liberally over veggies. Marinate for 6-12 hours or overnight, making sure to carefully flip the container upside-down and shake occasionally to redistribute the dressing.

Do you have to soak wooden skewers before baking? ›

If you don't soak them first, they tend to dry out, become brittle and may even burn. I grill often. I'll soak the skewers in water in a shallow pan for 30 minutes or so before I skewer the food. It's a good idea for oven cooking too.

How do you cook vegetables on a skewer? ›

Alternate the vegetables, skewering them onto 8-12 skewers. Grill the vegetable skewers. Heat a grill over medium high heat, between 400-450°F. Place the skewers on the grill and grill for 12 minutes total, rotating the skewers 2-3 times throughout the cooking process.

What spices make vegetables taste better? ›

Spices like chile powder, curry, smoked paprika, cinnamon, cumin, and black pepper can do wonders for vegetables. And never forget the most important seasoning: salt (just remember to add a little bit at a time and keep tasting).

How long to marinate veggies for kabobs? ›

Combine all marinade ingredients in a large Ziplock bag. Add in veggies and allow to marinate 4 hours or as long as overnight, turning occasionally.

How long should you let vegetables marinate? ›

Soft Vegetables (Broccoli, Tomatoes, Greens, etc.)

About 10 minutes is good. Don't marinate these for longer than 30 minutes because they will release water and get soggy. When marinating with other vegetables, add soft veggies last after the harder veggies have already soaked for a while.

How far in advance can you prepare kabobs? ›

Make Ahead Instructions: Make the chicken marinade and cut the vegetables 1-3 days in advance. Marinate the chicken for up to 6 hours ahead of time.
